Madeleines Recipe
Synonymous with France, Madeleines have been around since the 17th century, and are served at Colbert daily.
Makes 24 madeleines
Ingredients
200g butter
200g caster sugar
5 eggs
5g baking powder
190g flour
30g vanilla essence
Method
Preheat the oven to 170C.
In a large bowl, crack all 5 eggs, add vanilla essence and sugar, and whisk.
Then, add the flour and baking powder.
Cut butter into smaller pieces and place them in a microwave-safe bowl. Microwave, uncovered, on high until butter is melted, about 30 to 45 seconds.
Add melted butter into the mix and combine all together.
Spoon the mix into the buttered holes of the madeleines tin and place in the oven.
Bake for 8 minutes.
